Jordnaer, located in Gentofte, Denmark, is a restaurant that offers an exceptional dining experience that leaves a lasting impression. From the moment you set foot on the doorstep, Tina, the hostess, warmly welcomes you, instantly making you feel like a cherished guest for the evening.
Under the guidance of Chef Eric Vildgaard, the culinary journey begins with a series of delectable snacks. Each bite is a testament to the chef’s expertise, with flavors that gradually build and captivate your palate. Starting with light and beautifully presented bites, the progression leads to a crescendo with the Balfegó Tuna with Oscietra Caviar, bursting with remarkable flavors. The pinnacle of this delightful journey is reached with the signature dish—Rosettes Waffle adorned with Baerri Caviar, leaving an unforgettable impression. It is truly one of the finest start we have experienced at any Michelin-starred restaurant.
Visiting during the “flower season,” we found ourselves mesmerized by the delicate and exquisitely decorated dishes. The main courses continue the theme of lightness and emphasize a raw style, with the absence of meat, except for one dish slightly infused with bacon. Our only desire was for Jordnaer to provide a concluding dish that would complement the preceding culinary delights. Often, Michelin restaurants present a full meat dish suitable as a stand-alone lunch option.
Turbot – Morels – Vin Jaune
At Jordnaer, however, the perfectly cooked turbot, crowned with beluga caviar and accompanied by a succulent morel, pushes the boundaries. While it was nearly too rich, omitting the morel would have created an ideal ending. Nonetheless, the wild strawberry dessert was an absolute dream, summoning nostalgic childhood memories.
Jordnaer’s two Michelin stars are well-deserved, and it is undoubtedly on the cusp of attaining a third. The dedication and passion exhibited by the culinary team suggest they are striving to reach new heights and achieve this distinction. The service throughout the evening is impeccable, elevating the overall experience. While the wine pairing is good, it falls slightly short of excellence, but still surpasses typical Michelin standards.
