Discovering Silberbauers Bistro: A Review

Silberbauer Bistro

Silberbauers Bistro is a true gem in Copenhagen. We all have our favourite restaurant where we live – the one that calls to us more often than is healthy for our wallets. The irresistible combination of a great atmosphere among the staff and guests, and a menu that changes frequently, makes it hard to resist. Silberbauers Bistro ticks all these boxes and more.

Pâté au Poulet – Morilles – Cornichon – Moutarde

The restaurant is small and rustic, located half a flight of stairs down from Jægersborggade street. It is cosy and relaxed, making you feel immediately at home. Beware that the restaurant has a love for natural wines, but do not worry, there are some in the more “traditional” style.

For example, we enjoyed an excellent glass of Chateau De Lavernette, Beaujolais-Leynes, 2021 from a magnum. And if that doesn’t suit your taste, you can always bring your own bottle for a corkage fee, as our friend did with a 2019 Jean-Michel Guillon & Fils, Mazis-Chambertin, Grand Cru. An absolute delight which opened up beautifully in the carafe.

Truffle Toast

The menu at Silberbauers Bistro is displayed on a blackboard and changes almost daily, driven by the freshest ingredients available. During our visit, a 23 kg fresh line-caught swordfish was on the menu. We chose most of the dishes to share among us, all of which were delicious.

However, one dish I did not share was the quail with corn purée, the first summer chanterelles, and pickled pearl onions under a generous layer of lardo. It was the best quail I have ever had, beautifully cooked. Then there was the chicken pâté, the french fries, the truffle toast, the lemon tart, the goat cheese, and, you get the picture…
A Parisian bistro aficionado would be pleased.

Final Thoughts

The evening was perfect and the only thing that we could have wished for was that Silberbauers Bistro was in our own hometown. But luckily, we have our go-to restaurant in our city. We have to admit, as foodies, that we are jealous of the variety of restaurants Copenhagen has to offer.
